📝 Ingredients (Serves 4–6)

  • 6 medium orange bell peppers (look for ones that can stand upright)
  • 1 lb (450 g) ground beef, turkey, or plant-based alternative
  • 1 cup cooked rice (white, brown, or cauliflower rice)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

🛠️ Instructions

1. Prep the Bell Peppers

  • Slice off the tops and remove the seeds and membranes.
  • Using a small sharp knife, carve jack-o’-lantern faces on one side of each pepper—triangles for eyes, a little nose, and a jagged smile.
  • Lightly brush the insides with olive oil and set aside.

2. Cook the Filling

  • In a skillet over medium heat, warm the olive oil.
  • Sauté the onions and garlic until fragrant and softened.
  • Add the ground meat and cook until browned.
  • Stir in the tomatoes, rice, Italian seasoning, salt, and pepper.
  • Let the mixture simmer for 5–7 minutes until well combined and slightly thickened.
  • Mix in half of the cheese and remove from heat.

3. Stuff and Bake

  • Preheat the oven to 375 °F (190 °C).
  • Spoon the filling into each carved pepper, pressing down lightly to pack it in.
  • Place peppers upright in a baking dish, cover with foil, and bake for 25–30 minutes.
  • Remove foil, sprinkle remaining cheese on top, and bake for another 5–10 minutes until the cheese melts and peppers are tender but still hold their shape.

  • Arrange the peppers on a platter and dim the lights to highlight their glowing jack-o’-lantern faces.

  • Serve with a side of salad, roasted veggies, or crusty bread.

  • For extra Halloween fun, use a tealight (battery-operated) inside an empty pepper to make a glowing centerpiece!
